Chocolate muffins with caramel filling

Ingredients for 6 servings:

  • 150 g flour
  • 75 ml oil
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 pack of pudding powder, chocolate
  • 100 g dark chocolate, chopped
  • 6 tbsp yogurt
  • 5 tbsp cream
  • 1 pinch of salt
  • 1 egg(s)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Candy(s), (caramel)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Briefly beat the oil and egg. Add the yogurt and cream and continue beating briefly. In another bowl, mix the flour with the baking powder, baking soda, salt, chocolate shavings, pudding powder and vanilla sugar. Slowly add the flour mixture to the oil mixture and stir vigorously; do not beat anymore. Pour the mixture into muffin tins, filling them 2/3 full. Now add the caramel. (I use the Muh caramel candies and halve them, so I am not giving an exact number of grams.) Now add a little more of the mixture to the top, but only just enough to cover the caramel. Bake the muffins at 180°C (top/bottom heat) for about 20 minutes.
