Chocolate muffins with mascarpone frosting

Ingredients for 1 servings:

  • 125 g butter
  • 120 g sugar
  • 1 tsp vanilla sugar
  • 2 eggs
  • 200 g flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 20 g cocoa powder
  • 150 ml milk
  • 12 pieces of chocolate
  • 100 g mascarpone
  • 100 g double cream cheese
  • 100 g powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 45 minutes

for a 12-cup muffin tray

Cream the butter, sugar, and vanilla sugar until fluffy. Beat in the eggs one at a time. Mix the flour with the baking powder, cocoa powder, and salt, then stir into the egg mixture along with the milk. Line a 12-hole muffin tin with baking cups and fill evenly. Place a chocolate chip in the center of each batter. Bake in a preheated oven at 180°C (convection oven) for about 25 minutes on the middle rack. Cool on a wire rack for about 1 hour. Once cooled, combine the powdered sugar, mascarpone, and double cream cheese and spread on the muffins using a piping bag.
