Ingredients for 4 servings:

  • ½ liter of milk
  • 2 bars of chocolate, use your favorite variety
  • some cinnamon
  • 40 g cornstarch
  • 3 eggs, separated
  • 1 cup of cream
  • Sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Pour 6-10 tablespoons of the milk into a bowl. Heat the rest of the milk in a saucepan and melt the chocolate in it. Mix the cornstarch with the egg yolk and the 6-10 tablespoons of milk until the starch has dissolved. Bring the chocolate milk to a boil and whisk in the starch, egg, and milk mixture. Season to taste with cinnamon and wait until everything comes to a boil. The mixture must now cool. Whip the cream until stiff peaks form (since a small portion of the cream will be used later as a decoration, you can add a little sugar). Beat the egg whites until stiff peaks form. Once the chocolate mixture has cooled, carefully fold in the cream and egg whites. Decorate with dollops of cream. Variations: Use a vanilla pod and sugar instead of chocolate, or caramelize the sugar and bring to a boil with the milk.
