Chocolate zucchini muffins

Ingredients for 1 servings:

  • 400 g zucchini
  • 130 g margarine
  • 70 g sugar
  • ½ pack of vanilla sugar
  • 2 eggs
  • 100 g dark chocolate, melted
  • 230 g flour
  • 70 g almonds, ground
  • ½ pack of baking powder
  • ½ pack of baking soda (portion packet)
  • ½ pinch(s) of salt
  • 3 tsp cocoa powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

super fluffy and not too sweet

Finely grate the zucchini and drain in a sieve. Preheat the oven to 170°C (350°F) with fan. Combine the margarine, sugar, and vanilla sugar, then add the eggs and chocolate. Mix thoroughly until the sugar is almost gone. Now add the almonds. Sift the flour, cocoa powder, baking powder, baking soda, and a pinch of salt into the batter and mix briefly. Finally, mix in the grated zucchini. Pour the batter into the baking cups and bake for about 15 minutes. Makes about 18 cakes.
