Chrissi's Peach Cheesecake

Ingredients for 1 servings:

  • 2 eggs, size M
  • 1 pinch of salt
  • 500 g quark (low-fat quark)
  • ½ tsp lemon(s) – zest, grated
  • 2 tbsp pudding powder, vanilla
  • 4 tbsp sugar
  • 1 packet of vanilla sugar (bourbon)
  • 1 can peach(s), half in natural sweetener (250g drained weight)
  • 2 tbsp breadcrumbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

WW-suitable / for a springform pan with a diameter of 20 cm

First, separate the eggs. In a tall mixing bowl, beat the egg whites with a pinch of salt until stiff peaks form. Then, in a bowl, thoroughly whisk the egg yolks with the quark, grated lemon zest, pudding powder, sugar, and bourbon vanilla sugar until the mixture has become slightly lighter in color. Carefully mix in the stiff peaks with a whisk or spatula. Spray a 20cm springform pan with baking spray and sprinkle with breadcrumbs. Then evenly fill the bottom of the springform pan with about half of the quark mixture. Now arrange the drained peach halves in the pan and finally cover with the remaining quark mixture. Smooth the surface and bake in the oven at approximately 175°C (top and bottom heat) for approximately 40-45 minutes. Total: 19 p.p., 2.5 p.p. per piece for 8 pieces.
