Christmas Cookies: Almond Speculoos from Tray

The perfect christmas cookies: almond speculoos from tray recipe with a picture and simple step-by-step instructions.

  • 120 g Butter at room temperature, but not too soft
  • 125 g Sugar
  • 1 pinch Salt
  • 3 tbsp Speculoos seasoning
  • 3 drops Bitter almond flavor
  • 1 Pc. Egg
  • 180 g Flour
  • 100 g Ground almonds
  • 3 tbsp Milk
  • 120 g Flaked almonds
  1. Briefly knead the butter, sugar, salt, bitter almond flavor, speculoos spice with the dough hook of the hand mixer. Stir in the egg as well. Mix the flour and ground almonds and add to the dough. Knead with your hands and wrap in foil and put in the fridge for approx.
  2. Line a baking sheet (30 x 40 cm) with parchment paper. Roll out the dough thinly with a small baking sheet roller. Brush with milk and sprinkle with the flaked almonds (press down well). Use a sharp knife or pizza roller to cut the dough into small rectangles (approx. 7 x 4 cm).
  3. Bake in the preheated oven on the middle rack at 190 degrees (or fan oven 170 degrees) for about 15-18 minutes. Then let cool down on the cake rack.
