Christmas Cookies: Crispy Nougat Puff Pastry Rolls with Cranberries

The perfect christmas cookies: crispy nougat puff pastry rolls with cranberries recipe with a picture and simple step-by-step instructions.

For covering:

  • 50 g Butter
  • 4 tbsp Chopped almonds
  • 3 tbsp Dried cranberries
  • 75 g Nougat

Sugar-spice mixture:

  • 4 tbsp Sugar brown
  • 1 Knife point Aniseed spice
  • 0,5 tsp Ginger bread spice
  • 0,5 tsp Cinammon
  • 1 tsp Natural orange peel aroma

For painting:

  • 1 Egg

Additionally:

  • 1 piece Parchment paper
  1. Unroll the puff pastry and let it rest until further processing. Preheat the oven to 200 degrees (top and bottom heat). Let the butter melt in a saucepan, then let it cool down.
  2. Roast the almonds in a pan until golden brown, grind the cranberries in the food processor and finely chop the nougat with a knife.
  3. Mix the sugar, anise, gingerbread spice, cinnamon and orange flavor. Whisk the egg.
  4. Place the puff pastry on a large cutting board. First brush with the liquid butter and sprinkle on the sugar-spice mixture (leave about 1 tbsp.). Then spread the roasted almonds, the cranberries and finally the nougat on top. Press everything down a little with the help of a spoon.
  5. Roll up the puff pastry firmly from the long side. Use a sharp knife to cut approx. 1 cm thick slices from the roll and shape them a little. Place the slices a little apart on a baking sheet lined with baking paper.
  6. Brush the puff pastry with the beaten egg and sprinkle with the remaining sugar-spice mixture. Bake in the oven for about 20-25 minutes. Let the puff pastry rolls cool completely on a wire rack. Then keep it airtight.
