Ingredients for 2 servings:

  • 50 g date(s), dried
  • 50 ml orange juice
  • 250 g low-fat curd cheese
  • ¼ tsp gingerbread spice or cinnamon powder
  • 1 splash of milk, if necessary
  • n. B. Honey

Instructions

Split the dates with a sharp knife and remove the pits. Soak the date halves in the orange juice and refrigerate for about 3 hours, or until softened. Now puree all ingredients in a blender until no lumps remain. Be careful with the amount of milk; it shouldn’t be too runny! Season the quark with honey to taste and divide between two dessert bowls. Refrigerate until ready to serve. If desired, serve with sliced ​​mandarins or oranges. Tips: If the quark is a bit too runny, you can stir in some finely ground oats (or instant oats) to thicken it. The gingerbread spice gives this dish a very Christmassy taste and is perfect as a dessert after a delicious Christmas dinner, as it is very light and low in fat. Personally, I like to eat the whole batch for breakfast. Variations: Adults can soak the dates in Bailey’s or other liqueurs instead of orange juice.
