Christmas muffins with speculatius spice

Ingredients for 1 servings:

  • 250 g wholemeal flour
  • 1 packet of baking powder
  • 130 g sugar, white or brown
  • 1 packet of vanilla sugar
  • 70 g nuts, ground
  • 70 g chocolate sprinkles
  • 1 tsp, heaped speculatius (speculoos spice)
  • 1 egg(s)
  • 250 ml buttermilk
  • 60 ml oil, tasteless

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Recipe for 12 muffins. Combine all dry ingredients in a large bowl. Add the egg, buttermilk, and oil and mix well. Line a muffin tin with paper baking cups and divide the batter evenly among the cups. Bake at 180°C for about 25 minutes. Decorate with chocolate glaze or powdered sugar.
