Christmas ornamental quince jam with walnuts

Ingredients for 4 servings:

  • 1 kg quince(s), (ornamental)
  • 100 ml apple juice
  • 50 g walnuts, chopped
  • 2 tsp gingerbread spice
  • 500 g gelling sugar, 2:1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

A slightly sour winter jam

Wash the ornamental quinces, quarter them with a large knife, and remove the cores. Simmer the quinces with the apple juice for about 30 minutes, until the fruit softens. Pass the mixture through a sieve or food mill. Add the chopped walnuts, gingerbread spice, and preserving sugar and cook for about 5 minutes, stirring constantly. Caution: The mixture burns easily. Pour the finished jam into screw-top jars and seal immediately. The jam will have a slightly tart flavor. For a sweeter taste, use a 1:1 preserving sugar ratio.
