Ingredients for 4 servings:

  • 125 g mixed leaf salad, of your choice
  • 1 apple
  • 1 persimmon
  • ½ pomegranate
  • 75 g goat cheese
  • 1 handful of walnuts
  • Dressing of your choice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Vegetarian

Arrange the salad on a flat platter. Slice the apple and persimmon into wedges and arrange them on top of the salad. Cut a small cone-shaped section out of the pomegranate stem, cut the skin 4-6 times across the skin like an orange, and carefully remove the pomegranate wedges. Slowly flip the slices over and scoop out the seeds (you can tap the skin with a spoon to make them fall out more easily). Distribute them over the salad. Generously crumble the goat cheese and scatter it over the salad with the walnuts. Serve with the salad dressing.
