Christmas Stollen Mousse

Ingredients for 4 servings:

  • 200 g cake (Christmas Stollen)
  • 200 g yogurt
  • 200 g cream, whipped
  • 50 g candied orange peel
  • 50 g candied lemon peel
  • 5 sheets of gelatin
  • Brandy as desired
  • Powdered sugar as desired

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Blend the Christmas Stollen, candied orange peel, and candied lemon peel in a blender. Stir in the yogurt. Soak and dissolve the gelatin according to the instructions. Stir 3 tablespoons of the yogurt-Stollen mixture into the gelatin. Fold this gelatin mixture into the remaining Stollen-yogurt mixture. Fold in the whipped cream. Sweeten with powdered sugar, if desired, and flavor with brandy. Refrigerate for one hour. This is the perfect way to use up leftover Stollen at Easter, when no one can stand the sight of Christmas Stollen anymore!
