Cinnamon parfait with figs

Ingredients for 6 servings:

  • 3 egg yolks, fresh
  • 75 g sugar
  • 1 tbsp cinnamon
  • 250 g whipped cream
  • 4 figs, fresh
  • 100 ml red wine or grape juice
  • 1 packet of vanilla sugar
  • 12 amaretti biscuits

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 15 minutes

Beat the egg yolks and sugar until very fluffy. Stir in the cinnamon (leave a little for sprinkling). Whip the cream until stiff peaks and fold it loosely into the egg mixture. Pour into 6 small molds (or into a foil-lined loaf pan) and place in the freezer. Freeze for at least 4 hours. Wipe the figs with kitchen paper and quarter them. Bring the wine and vanilla sugar to a boil and add the figs. Boil uncovered in a saucepan for 5 minutes. Allow the figs to cool in the liquid. Remove the parfait from the freezer about 15 minutes before serving and turn out onto serving plates (turn the parfait out of the large mold onto a plate and slice if desired). Sprinkle the parfait with a little cinnamon and serve with the figs, liquid, and amaretti biscuits.
