Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
makes approx. 24 pieces
For the yeast dough, heat the milk and melt the butter or margarine in it. Let it cool until it is just lukewarm. Put the flour in a bowl and make a well in the center. Crumble in the yeast and mix with the milk and butter mixture and a little flour to make a pre-dough. Cover and let rise for about 10 minutes. Add the remaining ingredients and knead everything into a smooth dough. Cover and let rise until it has visibly increased in volume. Knead the dough briefly again on a floured work surface. Roll out into a 35 x 48 cm sheet. Whisk the egg yolk with the milk and spread a thin layer over the sheet. Mix the brown sugar and cinnamon and sprinkle evenly over the sheet. Roll up tightly, starting from the longer side. Cut the roll into 2 cm thick slices, place on the baking sheet lined with baking paper, and let rise for another 20 minutes. Bake in a preheated oven at 180°C for about 15 minutes. Allow to cool on a wire rack.
