Ingredients for 4 servings:

  • 400 g sausage (city sausage), smoked
  • 2 large onions
  • 4 cucumber(s) , (pickles)
  • 4 tbsp vinegar (white wine vinegar)
  • 2 tbsp oil (sunflower oil)
  • Salt and pepper, from the mill

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Skin the city sausage and cut into thin slices. Cut the onions into very fine rings and the pickled gherkins into strips or small cubes. Mix everything in a bowl with the vinegar and oil, season with salt and plenty of freshly ground pepper, and let it marinate in the refrigerator. Serve with fresh farmhouse bread and a cold beer. TIP: City sausage is a typical Franconian specialty – a smoked sausage in a ring with plenty of marjoram. You could also use hunting sausage or coarse ham sausage as a substitute. Of course, it won’t taste the same!
