Ingredients for 8 servings:

  • 500 g cherries, fresh or from the jar
  • 4 eggs, separated
  • 150 g flour
  • 50 g sugar
  • 50 g oat flakes
  • 200 g yogurt (cherry yogurt)
  • 1 lemon(s) (organic)
  • 125 ml buttermilk
  • 1 pinch of salt
  • powdered sugar

Working time approx. 15 minutes; Total time approx. 15 minutes

Fruit cloud – French dessert classic

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Grease a casserole or quiche dish with butter and dust with flour. Separate the eggs. Grate the lemon zest. Beat the egg whites with a pinch of salt with a hand mixer until stiff peaks form. In a mixing bowl, combine the flour, sugar, and oats. Beat in the yogurt, lemon zest, and egg yolks for 2 minutes. Then stir in the buttermilk. Carefully fold the beaten egg whites into the batter with a whisk, then pour the batter into the dish. Top with cherries and bake for 30 minutes. Best served warm, sprinkled with powdered sugar.
