Coarse Sausage Salad Lindau
The perfect coarse sausage salad lindau recipe with a picture and simple step-by-step instructions.
For the dressing:
- 1 small Cucumber, seedless
- 2 small Cucumber, sweet and sour, Silesian style, (from the jar)
- 40 g Radish, white or red (no beer radish)
- 0,5 medium-sized Onion, brown
- 40 g Carrot
- 50 g Honeydew melon
- 2 tbsp Dill, fresh or frozen
- 2 medium-sized Cloves of garlic, fresh
- 2 tbsp White wine vinegar, mild
- 2 tbsp Brine, from the pickle jar
- 2 tbsp Orange juice
- 1 tsp Sugar, white, fine
- 2 Pinches Salt
- 2 Pinches Black pepper from the mill
Also:
- 3 tbsp Sunflower oil
To garnish:
- Sprigs of dill, fresh
- Flowers and leaves
The meat loaf or the Lyoner:
- Chop the meatloaf into approx. 5 x 5 x 40 mm pieces.
The cucumbers:
- Wash the cucumber, cap both ends, peel it like a zebra (leave the green stripes) and cut across into pieces approx. 40 mm thick. Lengthways into 5 mm thick slices and cut them into 5 mm wide strips. Do the same with the pickled cucumbers.
The white radish:
- Wash the white radish, cut off the lower end, cut 2 to 3 pieces approx. 40 mm wide crosswise, peel and chop like the cucumbers.
The vegetable onion:
- Halve an onion lengthways, peel one half, cut in half crossways and cut lengthways into approx. 3 mm wide slices and fan them out into strips.
The carrot:
- Wash a piece of carrot, cap at the bottom and peel completely. Use a julienne slicer to cut the carrot into silk threads. Have the required amount ready.
The honeydew melon:
- Make a 6 mm wide cutout lengthways from the honeydew melon and remove the core. Cut the required amount into 6 mm cubes.
The fresh dill:
- Wash the fresh dill, strip off the leaves and cut into small pieces. Reserve a few twigs for garnish. Put all the prepared ingredients in a sufficiently large bowl.
The dressing:
- For the dressing, cap, peel and squeeze the garlic cloves at both ends. Add the remaining ingredients and mix well. Mix the dressing into the salad about 30 minutes before serving, drizzle the resulting liquid over the salad every now and then.
Olive oil:
- Add the olive oil and mix in 5 minutes before serving. Season to taste with salt and pepper.
Garnish and serve:
- Spread the finished salad on the serving bowls. Garnish and serve cool.
