Coco-curry spinach

Ingredients for 2 servings:

  • 300 g spinach, frozen
  • 1 onion(s)
  • 200 ml coconut milk, creamy
  • 1 tsp curry powder
  • 1 garlic clove(s)
  • 2 tbsp sesame seeds, roasted
  • olive oil
  • salt and pepper
  • chili powder
  • n. B. Rice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Thaw and rinse the spinach. Peel and finely chop the onion, and fry it in a little oil until translucent. Heat all ingredients, except the sesame seeds, in a pan and simmer, covered, for about 15 minutes. Serve sprinkled with toasted sesame seeds and served with rice, if desired.
