Ingredients for 1 servings:

  • 300 g low-fat curd cheese
  • 6 eggs
  • 1 packet of baking powder
  • 100 g almonds, ground
  • 100 g flaxseed, crushed
  • 30 g wheat bran
  • 50 g chickpea flour
  • 2 tbsp sunflower seeds, oa

Preheat the oven to 150°C fan-assisted or 170°C conventional. Whisk together the low-fat quark, eggs, and baking powder. Then add the almonds, flaxseed, bran, and chickpea flour and knead with a hand mixer until a smooth dough forms. Form the dough into rolls, place them on a baking sheet lined with baking paper, and sprinkle with sunflower seeds, etc. Bake for approximately 50-60 minutes. Note from Chefkoch.de: Because flaxseed contains a relatively high amount of cadmium, the German Federal Center for Nutrition recommends consuming no more than 20g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
