Coconut bread with yeast

Ingredients for 1 servings:

  • 1 kg flour (type 405 or 1050)
  • 2 packets of yeast (dry yeast)
  • 100 g desiccated coconut
  • 400 ml coconut milk
  • 250 ml milk
  • 100 g honey

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Mix the first three ingredients in a bowl. Heat the last three ingredients on the stovetop or in the microwave and knead everything together in a food processor. Let the dough rest for half an hour. Meanwhile, grease two loaf pans. Pour in the dough and let it rise for another 15 to 20 minutes. Preheat the oven to 200°C and bake the bread for about 60 minutes. It pairs wonderfully with honey or jam and makes an exotic change for breakfast!
