Coconut chocolate muffins

Ingredients for 12 servings:

  • 130 ml coconut milk
  • 150 g crème fraîche
  • 80 ml syrup (caramel syrup)
  • 60 g brown sugar
  • 2 eggs
  • 120 g butter, melted
  • 200 g chocolate (coconut chocolate), chopped
  • 180 g flour
  • 80 g cornstarch
  • 1 packet of vanilla sugar (Bourbon)
  • 30 g desiccated coconut
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, line a 12-cup muffin tin with paper baking cups and preheat the oven to 200°C. Then, in a bowl, thoroughly mix all the dry ingredients (from coconut chocolate to salt). In a second bowl, whisk the remaining ingredients (from coconut milk to melted butter) until well combined. Now pour the flour mixture onto the egg mixture and whisk quickly. Fill the muffin tin with the batter and bake in the hot oven for about 20-25 minutes (use a toothpick to check if the mixture is cooked through!).
