Ingredients for 1 servings:

  • 200 g butter
  • 200 g sugar
  • 1 pinch of salt
  • 4 eggs
  • 200 g flour
  • 2 tsp baking powder
  • 120 g desiccated coconut
  • 1 dl coconut milk
  • 1 dl milk
  • 1 ½ tbsp instant coffee powder
  • 1 tbsp sugar
  • 100 g flour

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cream the butter in a bowl until soft, then stir in the sugar and salt until smooth. Beat in the eggs one at a time. Mix the flour with the baking powder and stir into the mixture. Divide the dough into two portions. Stir the desiccated coconut and coconut milk alternately into one half of the dough. Pour into the greased and coconut-dusted pan. Bring the milk, coffee, and sugar to a boil and let cool. Stir the flour and flour alternately into the other half of the dough. Pour onto the white dough and use a fork to fold it into the white dough in a spiral shape. Bake in a preheated oven at 180°C for approx. 55 minutes.
