Coconut pudding

Ingredients for 2 servings:

  • 200 ml coconut milk
  • some rice flour
  • 3 figs
  • 1 tbsp cane sugar
  • Desiccated coconut, a fig and cane sugar for decoration

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Whisk the coconut milk and brown sugar until creamy and bring to a boil briefly. Thicken with the rice flour until a pudding-like consistency forms. Now puree 2 or 3 figs and stir into the mixture. Cut one fig into small pieces. Toast the desiccated coconut in a pan with a little brown sugar, then garnish the pudding with the chopped fig. Let cool and enjoy!
