Coconut rice

Ingredients for 2 servings:

  • 260 g rice (lan grain rice)
  • 400 ml water
  • 100 ml coconut milk
  • ½ tsp salt
  • 25 g desiccated coconut

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rinse the rice under running water until the water runs clear. Place it in a sieve and drain. Place the rice and water in a pot, add the salt, coconut milk, and desiccated coconut, and bring to a boil. Cover the pot and simmer over low heat until the rice is tender and the liquid has evaporated. If the rice isn’t quite cooked, add a little more water. Transfer the rice to a plate and sprinkle with desiccated coconut. Goes well with any kind of curry. Tip: Washing the rice grains releases the starch, preventing them from sticking together. It also prevents the rice from sticking together as quickly when cooked.
