Ingredients for 1 servings:

  • 200 g desiccated coconut
  • 6 tbsp rum
  • 80 ml oil, neutral
  • 2 eggs
  • 200 g coconut milk
  • 150 g sugar, 50 g brown, 100 g white
  • 150 g flour
  • 2 tsp, heaped baking powder

Seductive coconut muffins with a subtle hint of rum

All ingredients should be at room temperature. This recipe yields 12 muffins (1 muffin tray). Preheat the oven to 160°C (fan oven). Mix the desiccated coconut with the rum and let it sit for a moment. In a bowl, thoroughly mix the oil, eggs, coconut milk, and sugar. Quickly stir in the flour and baking powder. Finally, mix in the desiccated coconut and immediately pour the batter into the paper-lined muffin tray. Bake for 20 minutes on the middle rack.
