Coconut soufflé

Ingredients for 4 servings:

  • 400 ml coconut milk (one can)
  • 3 tbsp brown sugar
  • 40 g cornstarch

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Shake the can of coconut milk well and then open it. Mix 3 tablespoons of coconut milk with the cornstarch. Heat the remaining milk with the sugar. When it boils, remove from the heat and whisk in the cornstarch mixture. Bring back to a boil and stir for another minute. Done! Pour into serving bowls and let cool. Serve with strawberry or raspberry sauce, or an exotic fruit salad. It’s also delicious on its own!
