Ingredients for 3 servings:
- 100 g desiccated coconut
- n. B. water
- 350 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Combine the desiccated coconut with 350 ml of water and 2-3 tablespoons of the sugar, bring to a boil, and let cool. Drain the cooled desiccated coconut through a cloth and then squeeze out the excess water (they absorb a lot of water). Collect the liquid in a saucepan and top up to 350 ml with a little water. Add the sugar, vanilla sugar, and salt, bring to a boil, and stir well until all the sugar has dissolved. Simmer gently for at least 5 minutes. If you prefer the syrup thicker, simply reduce it further. It will thicken slightly as it cools. Pour into attractive glass bottles and store in the refrigerator. Makes approx. 375 ml. It tastes wonderfully of coconut and is a real treat in a latte macchiato or on vanilla ice cream! The squeezed desiccated coconut is also great for baking.
