Ingredients for 2 servings:
- 300 g cod fillet(s)
- salt and pepper
- 1 tbsp olive oil
- 40 g butter, warmed until creamy
- ½ tbsp tomato paste
- 1 tbsp curry powder
- 30 g breadcrumbs
- some parsley, chopped

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
also delicious with other fish, for a casserole dish
Preheat the oven to 200°C (top/bottom heat). Brush a baking dish with olive oil. Rinse the fillets with cold water, pat dry, season with salt and pepper, and place them side by side in the baking dish. Mix the butter with tomato paste, curry powder, and breadcrumbs and spread the mixture over the fillets. Bake on the middle rack of the oven for 15-18 minutes until a golden brown crust forms. Serve on warmed plates sprinkled with a little parsley. This dish goes well with potatoes and peas.
