Cod in sesame coating

Ingredients for 4 servings:

  • 1 small mango(s), ripe
  • 1 lemon juice
  • 1 tbsp quark or creme fraiche
  • Salt
  • Pepper, white
  • Cayenne pepper
  • 100 g sesame seeds
  • 750 g cod fillet(s)
  • 5 tbsp flour
  • 2 eggs
  • 6 tbsp oil, sesame oil to taste

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the mango, remove the flesh from the stone, and puree it with 1 tablespoon of lemon juice and the quark or crème fraîche. Season with salt, pepper, and cayenne pepper. Coarsely grind the sesame seeds in a food processor or grain mill. Wash the fish, pat dry, and divide into four portions. Drizzle with the remaining lemon juice, salt, and pepper. Put the flour in a plate and beat the eggs in a second plate. First coat the fish in the flour, then dip it in the eggs and coat it with the ground sesame seeds. Heat the oil in a large pan and fry the fish over medium heat for about 8 minutes until golden brown, turning once. Serve with the mango sauce. Per portion approx. 500 kcal, 42 g protein, 27 g fat, 12 g carbohydrates. I served it with basmati rice.
