Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel the mango, remove the flesh from the stone, and puree it with 1 tablespoon of lemon juice and the quark or crème fraîche. Season with salt, pepper, and cayenne pepper. Coarsely grind the sesame seeds in a food processor or grain mill. Wash the fish, pat dry, and divide into four portions. Drizzle with the remaining lemon juice, salt, and pepper. Put the flour in a plate and beat the eggs in a second plate. First coat the fish in the flour, then dip it in the eggs and coat it with the ground sesame seeds. Heat the oil in a large pan and fry the fish over medium heat for about 8 minutes until golden brown, turning once. Serve with the mango sauce.
