Ingredients for 4 servings:
- 200 g cod fillet(s), fresh
- 1 lemon(s)
- 50 g pine nuts
- 1 shallot(s)
- 1 garlic clove(s)
- 250 g leaf spinach
- 100 g breakfast bacon
- Salt and pepper, black
- some oil for frying

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes
quickly prepared
Dice the shallot and garlic, not too finely. Heat a large pan, add the pine nuts, and lightly toast for two minutes. Add the garlic and shallot. Toast for another two minutes, stirring occasionally. Add the well-washed spinach and mix with the ingredients in the pan. Cover and simmer over medium heat for about 5 minutes, until the spinach has wilted. Cut the cod fillets into pieces about 7 cm wide. Wrap them in the bacon. Add a little oil to a hot pan and fry the fish for about three minutes on each side, starting with the side where the bacon overlaps so it all sticks together. Place the spinach on a warmed plate and add two pieces of fish to each side. Drizzle with a little lemon juice.
