Cold Avocado Soup
The perfect cold avocado soup recipe with a picture and simple step-by-step instructions.
- 500 ml Cold vegetable broth
- 2 Ripe avocados
- 2 Spring onions
- 0,333333 Cucumber
- 1 El Freshly squeezed lemon juice
- Unsweetened soy yogurt
- Cut the spring onions and cucumber into large pieces, remove the avocado pulp. Finely puree with the broth and lemon juice in a blender.
- Min. Chill for 3 hours.
- Serve with a dollop of yogurt.
