Colorful Egg Pan

The perfect colorful egg pan recipe with a picture and simple step-by-step instructions.

  • 1 Zucchini
  • 4 Potatoes
  • 2 Tomatoes
  • 8 Eggs
  • Salt
  • Pepper
  • Oil
  • Chives
  1. First cook the whole potatoes until they are soft.
  2. Peel the zucchini and cut into slices. Wash the tomatoes and also cut them into slices. Cut the pre-cooked potatoes into slices as well. Cut the chives into rolls.
  3. Put some oil in a pan and let it get hot. Now add a portion (approx. 1/4 part) of the potato, courgette and tomato slices to the pan and add a little salt. Fry the whole thing for about 2-3 minutes.
  4. In the meantime, put 2 eggs in a tall cup or something similar, season with salt and pepper and stir well. Add the beaten egg to the vegetables in the pan and let stand for a few minutes with the lid closed.
  5. Arrange the colorful egg pan on a plate and prepare another three servings in the same way. In the meantime, keep the finished portions warm in the oven.
  6. When all the portions are ready, garnish the plates with a little chives.
  7. BON APPETITE !!!
