Ingredients for 4 servings:
- 80 g cucumber(s)
- 6 stalks of spring onion(s)
- 2 tomatoes (vine tomatoes)
- 1 bell pepper(s), yellow
- 2 stalk(s) Celery , small
- 4 radishes
- 80 g lamb’s lettuce
- 2 tbsp lemon juice
- 1 clove(s) garlic
- 150 g natural yogurt, low-fat
- 2 tbsp olive oil
- some salt and pepper
- possibly mint, for garnishing
Instructions

Wash and trim the vegetables, and remove the seeds if necessary. Cut everything into slices or strips and bite-sized pieces. Wash and trim the lamb’s lettuce, and tear it into bite-sized pieces. For the dressing, crush the garlic clove and mix well with the other ingredients. Add the vegetable pieces and lettuce, mix well, and garnish with a tablespoon of freshly chopped mint, if desired. Serve immediately. Tip: Serve with an omelet or a slice of bread fried in an egg.
