Colorful salad with chicken breast strips

Ingredients for 2 servings:

  • ½ iceberg lettuce
  • 1 bell pepper(s), red
  • 2 carrots
  • ¼ cucumber(s)
  • 1 tomato(s)
  • 1 onion(s)
  • 2 chicken breast fillets
  • Spice mix for chicken
  • some oil
  • some vinegar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the iceberg lettuce into strips, wash it, and arrange it on plates. Trim and slice the bell pepper. Wash the tomato and cut it into eighths. Peel and slice the cucumber. Arrange everything in portions on the iceberg lettuce. Peel and grate the carrots, and add them to the salad. Cut the chicken breast fillet into strips, sear them, and finally season with the chicken seasoning. Meanwhile, peel and halve the onion. Cut it into rings and sauté in the pan until browned. Then arrange the chicken breast strips on the salad plates and top with the sautéed onion rings. Drizzle the whole thing with a little vinegar and oil. Baguette with herb butter goes very well with it. Note: Depending on the size of the individual ingredients, the recipe is enough for 3 people.
