Ingredients for 2 servings:
- 3 eggs
- 250 g mushrooms
- 6 cocktail tomatoes
- 2 spring onions
- 2 tbsp olive oil
- salt and pepper
- Paprika powder, mild
- Herbs of Provence
Instructions

Slice the mushrooms, cut the spring onions into rings, and halve the tomatoes. Heat the olive oil in a non-stick pan. Add the mushrooms to the pan, sprinkle with Provençal herbs, and fry for about 5 minutes over medium heat. Add the tomatoes and sauté for 2 minutes. Then add the spring onions and sauté for another 2 minutes, stirring frequently. Season with salt, pepper, and paprika. Add the eggs and fry, stirring occasionally, until set. Season to taste with salt and pepper.
