Cookies: Lemon Boats

The perfect cookies: lemon boats recipe with a picture and simple step-by-step instructions.

The cookies

  • 400 g Spelled flour type 630
  • 150 g Powdered sugar
  • 1 piece Egg
  • 200 g Butter
  • 1 piece Lemon
  • 5 drops Lemon oil
  • 1 pinch Salt

The filling

  • 120 g Cocoa butter
  • 70 g Powdered sugar
  • 50 g Lemon peel
  • 3 drops Lemon oil
  • 1 piece Lemon
  • 50 ml Cream

  • 1 piece Lemon glaze

The cookies

  1. Squeeze the lemons and rub the peel. Knead a smooth dough from the ingredients with zest and juice of a lemon, wrap it in cling film and let it rest in the refrigerator for about 2 hours.
  2. Roll out the dough in portions, (on flour, between two layers of foil or on a silicone pad) cut out boats (or other motif), place the cookies on a sheet lined with paper or foil and place in a preheated tube at 160 degrees for approx. 10 – Bake for 12 minutes. Let cool down.

The filling

  1. Mix the lemon peel with a tablespoon of powdered sugar and then grate finely.
  2. Melt cocoa butter with powdered sugar, add grated lemon peel, lemon juice and zest, lemon oil and cream and mix well. Now let the filling cool down until it is spreadable.

The finish

  1. Brush one boat with the filling, place a second on it and decorate all the cookies with lemon icing.
  2. Store in a suitable container. These cookies get a little soft when stored.
