The caramel cream
- 1 recipe Caramel cream see below
- 400 g Spelled flour type 630
- 100 g Sugar
- 1 pinch Salt
- 1 piece Egg
- 1 Knife point Ground vanilla
- 100 g Mascarpone

The caramel cream
- see sauces: cinnamon and caramel sauce – more like a cream
- Mix the flour, sugar, egg, salt and mascarpone into a batter. Stir in the caramel cream and knead well. Wrap the dough in cling film and let it rest in the refrigerator for at least two hours
- Roll out the dough in portions (between two layers of foil, on flour or a baking mat) and cut out small stars. Place this on a sheet lined with paper or foil and bake in a preheated oven at 160 degrees air circulation for approx. 10 – 12.
- After it has cooled down, brush one star with the caramel cream and cover with a second star.
- Let some couverture melt and decorate the stars with it.
- If there is any residue left over from the caramel cream, you can use it as a spread or just snack on it.
