Ingredients for 1 servings:

  • 2 m.-large banana(s), ripe
  • 100 g desiccated coconut
  • Vanilla concentrate, vanilla sugar or vanilla pulp, optional
  • Chocolate or Nutella

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Paleo, vegan, gluten-free

Peel the bananas and cut them into pieces. Place the banana pieces and desiccated coconut in a suitable container and puree the mixture. Season with vanilla, if desired. Line a baking sheet with baking paper and divide the dough into portions. An ice cream scoop or a tablespoon is ideal for this. Flatten the dough portions slightly and shape them evenly with a spoon. Alternatively, you can also shape the dough between your palms. Bake the cookies (12-15 pieces) at 190°C (180°C fan-assisted oven) for 20 to 25 minutes, until the edges are lightly browned. Once they have cooled slightly, decorate the cookies with chocolate or Nutella (regular or low-carb/vegan), if desired.
