Cookies with white chocolate, almonds and pine nuts

Ingredients for 1 servings:

  • 115 g butter, soft
  • 115 g sugar
  • 115 g brown sugar
  • 1 egg(s)
  • 1 packet of vanilla sugar
  • 135 g flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 100 g almonds, peeled, coarsely chopped
  • 100 g chocolate, white or milk, roughly chopped
  • 80 g pine nuts or pistachios
  • 50 g oat flakes

First, cream the butter with the sugar and vanilla sugar using a hand mixer until creamy, then add the egg. Then add the flour mixed with the baking soda. I use my hand mixer with a dough hook for this. Finally, mix in the remaining ingredients with the dough hook. Then, using two spoons, form small mounds and place them on a baking sheet. Leave plenty of space between the mounds, as they spread quite a bit. Bake at 175°C for 10-20 minutes, depending on your oven, until golden brown. This amount makes about 4 trays of 16 cookies each, for a total of about 60 cookies. Variation: You can use milk chocolate instead of white chocolate. I can also recommend using pistachios instead of pine nuts, although they are a bit tiresome to shell.
