Cornelian cherry liqueur

Ingredients for 1 servings:

  • 350 g cornelian cherries, very ripe
  • 150 g rock sugar, brown
  • 1 stalk(s) cinnamon
  • 1 vanilla pod(s), split
  • 1 bottle of white rum (0.7l), at least 40%

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the cornelian cherries and, if present, remove the stems. Then lightly score or crush the cornelian cherries and place them in a fermentation vessel along with all of the ingredients listed above. Place the fermentation vessel, which should be made of glass and transparent, on a windowsill and let stand for 6-8 weeks or longer, shaking frequently. The liqueur will be most intense and flavorful if it is allowed to stand for more than a year. Strain the liqueur, decant it into appropriate bottles, and seal them. Cornelian cherries are a good source of vitamins. Their slightly sour taste, which comes from the malic acid, gives the drink a refreshing note.
