Cottage cheese and apple pancakes

Ingredients for 4 servings:

  • 150 g flour
  • 100 g cottage cheese
  • 1 apple (sour)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp vanilla sugar
  • 3 tbsp butter, melted
  • 150 ml milk
  • 2 eggs
  • 50 g sugar
  • 4 tbsp oil

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Mix flour, baking powder, baking soda, and vanilla sugar. Peel and grate the apple. Mix the grated apple, cottage cheese, butter, milk, and egg yolks together. Pour the wet ingredients onto the dry ingredients and mix in with a spatula or wooden spoon. Beat the egg whites until stiff peaks form, gradually adding the remaining sugar. Carefully fold the stiff egg whites into the mixture. Heat the oil in a non-stick pan, then use a tablespoon to drop small heaps of batter into the pan and flatten slightly. When one side is brown, flip it over. Serve with maple syrup or sugar and cinnamon.
