Couscous spelt bread

Ingredients for 1 servings:

  • 200 g couscous
  • 400 g spelt flour
  • 2 tsp cane sugar
  • 100 g pumpkin seeds
  • 1 tsp salt
  • 1 packet of dry yeast
  • 350 ml water, lukewarm

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Combine couscous, spelt flour, brown sugar, 70g pumpkin seeds, salt, and yeast in a bowl. Add 350ml lukewarm water. Knead thoroughly until a firm dough forms. Pour the dough into a loaf pan lined with baking paper and let stand for 15 minutes. Brush the dough with water and sprinkle with the remaining pumpkin seeds. Place the pan in a cold oven. Bake at 180°C (top/bottom heat) for 50 minutes.
