Cranberry Pecan Cookies

Ingredients for 1 servings:

  • 125 g butter
  • 1 tbsp oil (walnut oil)
  • 125 g brown sugar
  • 4 tbsp milk
  • 200 g oat flakes
  • 2 tbsp flour
  • ½ tsp baking powder
  • 200 g nuts (pecans)
  • 100 g cranberries, dried

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, cream the butter with oil and brown sugar until fluffy. Combine the oats, flour, and baking powder, then stir in the milk. Finally, fold in the chopped pecans and cranberries. Line 1-2 baking sheets with parchment paper and, using 2 teaspoons, place small heaps of the dough onto the baking sheets. The dough will be quite crumbly, but that’s okay—it will thicken during baking. Bake one baking sheet at a time in an oven preheated to 180°C (350°F) for about 12 minutes each. This yields approximately 50 cookies.
