Cream cheese buttercream with white chocolate
Carefully melt the white chocolate in a bowl in the microwave or in a double boiler, stirring every 15 seconds with a silicone spatula. Let the melted chocolate cool until it is no longer warm but still liquid. Mix the butter and cream cheese in a bowl until smooth. Stir in the cooled and liquid white chocolate until smooth. Then stir in the vanilla extract. Add the bitter almond flavoring, starting with a drop, testing the taste, and then stirring in the rest if necessary. If the frosting is too soft, simply chill it in the refrigerator. The frosted cream is perfect for decorating cupcakes, cakes, and gateaux with a piping bag and spatula, or can be used as a filling.
