Peel the skin off the sausage and make deep cuts at intervals. Grease an ovenproof dish. Place the sausage in the dish. Mix together the mustard, ketchup, curry powder, and onion powder or grated onion. Brush the mixture over the cuts. Place the apple pieces into the cuts. Brush the sausage with melted butter. Place the dish on the middle rack of the preheated oven and roast for about 30 minutes. (Electric oven approx. 225°C/Gas Mark 4/Fan 200°C). Baste with butter occasionally. We like to serve it with mashed potatoes and a green salad. A variation: Season the sausage with grated horseradish and place thinly sliced leek rings into the cuts. It’s also delicious!
