Creamed herring, mom's style

Ingredients for 2 servings:

  • 1 pack of herring(s), about four fillets
  • 1 small jar of mayonnaise
  • 3 m.-sized apple
  • 3 m.-sized onion(s)
  • 250 ml cream
  • ½ liter of milk
  • 4 grains allspice
  • 4 bay leaves
  • salt and pepper
  • 1 jar of pickles

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Rinse the herring fillets. Place the mayonnaise in a bowl. Add the milk and cream and whisk to combine. Season with bay leaves, allspice, pepper, and salt to taste. Peel the onions and apples. Slice the onions and drained cucumbers and add them to the sauce along with the finely chopped apples. Season to taste and mix gently with a spoon. Add a little more milk if needed and season again. Place the herring fillets in the sauce. Cover the bowl and let the fish marinate in the refrigerator overnight. Serve with boiled potatoes.
