Ingredients for 2 servings:
- 3 m.-sized eggs
- ½ tsp salt
- 1 pinch(s) of sugar
- 6 tbsp flour
- 10 g butter
- 250 ml milk
- 2 medium-sized egg yolks
- 100 ml cream
- ½ tsp broth, granulated
- salt and pepper

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 25 minutes
Noodles made from crêpe dough
Make the crepe batter from the flour, 3 eggs, the milk, a pinch of salt, and a pinch of sugar. Let it rest for about an hour. Now, in the crepe pan, fry the batter into batches of crepes; the crepes should be lightly golden brown on both sides. Tightly roll up the finished crepes and cut the rolls into thin strips. For the sauce, beat the egg yolks with the salt, sugar, and granulated stock until frothy. Add the cream and heat the sauce over moderate heat, stirring continuously. Add the pasta and fold in. Serve.
