Crêpes with cheese and ham filling

Ingredients for 2 servings:

  • 2 eggs
  • 200 ml milk
  • 4 tbsp flour
  • 200 g cheese (Gouda)
  • 200 g cooked ham
  • butter
  • 1 pinch(s) of sugar
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Whisk together the eggs, milk, flour, sugar, and salt in a measuring jug (it should be very thin, almost runny). Cover the measuring jug with cling film and let it rest in the refrigerator for 1 hour. Meanwhile, grate the cheese and dice the ham. Heat a nonstick frying pan and lightly butter it, using a brush if necessary. Pour half a ladleful of batter into the pan for each crêpe and swirl it around to spread the batter. Turn the crêpe over when it starts to bubble and the surface is no longer moist, then cook for another 30-40 seconds on the other side, while adding the ham and cheese so that it melts slightly. Fold and serve.
