Crispy chicken skin – using up leftovers

Ingredients for 4 servings:

  • 4 chicken breasts or chicken legs, skin only
  • 1 pinch of fleur de sel

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

In many recipes, the chicken skin is separated from the meat before cooking and ends up in the dog food or in the trash. Instead, it’s very easy to turn it into a crispy treat. Line a baking tray with baking paper. Spread the chicken skin on it, skin side down. Sprinkle the skin with fleur de sel and cover with a second sheet of baking paper. Weigh this down with a second baking tray. Bake the chicken skin in an oven preheated to 180°C (top/bottom heat) for 15 minutes, until the skin is crispy and golden. Remove any excess fat from the finished skin with kitchen paper and add more salt if necessary. If you are not using it immediately, store it in an airtight container. The chicken skin can also be used as a garnish for various chicken dishes or crumbled and sprinkled over the top. It is suitable for garnishing, crunching, or as a seasoning.
