Crispy Mozzarella on Tomatoes and Rocket
The perfect crispy mozzarella on tomatoes and rocket recipe with a picture and simple step-by-step instructions.
- 4 Tomatoes
- 2 tbsp Pesto green (glass)
- 1 tbsp White wine vinegar
- 25 ml Orange juice
- 2 tbsp Oil
- 125 g Mozzarella
- 25 g Flour
- 1 Egg
- 50 g Breadcrumbs
- 0,5 bunch Arugula
- Salt and pepper
- Balsamic vinegar crema
- Wash tomatoes, clean and cut into slices, place them on 2 plates in a circle. Mix pesto, vinegar, orange juice and 1 oil into a dressing, season with salt and pepper.
- Pat the mozzarella dry and cut into finger-thick slices, turning each slice first in the flour, then in the beaten egg, and finally in breadcrumbs. Press on the breading. Fry the mozzarella in plenty of hot oil on each side for about 1-2 minutes. Drain on kitchen paper.
- Wash the rocket, shake dry, spread on the tomatoes and drizzle with the dressing. Serve with the mozzarella and drizzled with balsamic cream.
